Tell us what to have for lunch

Salt and pepper shakers in the shape of two chefs with moustachesDr B. and I are looking for lunchtime ideas to expand our cooking repertoire, and are very keen to hear any suggestion you might have for us.

We are not too fussy about what we eat, but we have rather strict requirements concerning food preparation, storage and transport.

More precisely, we are looking for recipes that are

  • made with easy to find ingredients
  • prepared in ten minutes or less (excluding cooking time)
  • suitable for home freezing
  • easy to transport
  • suitable to be eaten cold
  • 600 kcal or less
  • gluten, celery and anchovy-free
  • nutritionally balanced
  • under 5 pounds per meal

So far we have half a dozen that meet these requirements. However, they are starting to wear a bit thin, and I fear that lunchbox fatigue might soon drive us to stick our gobs under the ice-cream machine nozzle at the nearest McDonald's.

    These are more of a snack than a full meal, but oat cakes with
    some Quark on top are very nice, together with some salad
    (anything you fancy, but we tend to have in a variety of lettuce, cucumber, vine toms, red/yellow peppers, spring onion, etc.)
    I eat a fair amount of home-made bread in the morning and at lunchtime (Hovis wholemeal flour is very nice - we make the bread overnight in a Panasonic breadmaker).

    Tuna, haricot beans (cucumber, onion etc) with a salad dressing?

    Blue cheese and potato salad?

    Or something I invented myself a while back; very thinly sliced silverside of beef with grated carrot, sultanas and ginger, in a lemon-juice/oil dressing.

    I'd rather die than carry a thermos flask, but hot soup is getting more and more appealing…
